PIE CRUST
INGREDIENTS:
4 cups flour
1 Tbsp sugar
1 Tbsp vinegar
2 tsp salt
1 ¾ cup shortening
1 large egg
PREPARATION:
Mix flour, sugar and salt together. Add shortening and mix until crumbly. In
separate bowl, beat ½ cup water, egg and vinegar. Add to flour mix and mix until
good consistency. Divide into five parts. Refrigerate at least ½ hour. These
individual packets each make one crust. They may be frozen if wrapped well.
HINTS:
Lard makes the flakiest crusts and butter makes the most flavorful. Shortening
and oil may also be used. Shortening is the easiest to work with. You may also
use part of each such as lard and shortening or other combinations.
Liquids should be very cold when being
added. It should be added very gradually. If the dough gets too wet, then more
flour must be added making a tougher crust. On humid days, liquids may need
to be decreased.
