RECIPES - Creamy Green Beans & Mushrooms ~ Sour Cream Apple Pie ~ Perfect Pie Crust ~ Banana Sour Cream Bread

CREAMY GREEN BEANS AND MUSHROOMS
Makes 4 servings
INGREDIENTS:
8 ounces sliced fresh mushrooms
half cup finely chopped onion
One fourth cup butter
1 half pounds fresh cut green beans or 16 to 20 ounces frozen green beans
1 cup water salt and pepper
half cup heavy cream

PREPARATION:
Sauté mushrooms and onions in hot butter. Add green beans, water, and salt and pepper.
Bring to a boil; reduce heat and cover. Simmer until tender.
Add cream and heat through without boiling.
Taste and add more salt and pepper as needed.

SOUR CREAM APPLE PIE
INGREDIENTS:
2 eggs
1 cup sour cream
1 cup sugar
6 tablespoons all-purpose flour, divided
1 teaspoon vanilla extract
One fourth teaspoon salt
3 cups chopped, peeled baking apples
1 (9 inch) unbaked pie shell
3 tablespoons cold butter or margarine
One fourth cup packed brown sugar

PREPARATION:
In a large bowl, beat eggs. Add sour cream. Stir in sugar, 2 tablespoons flour, vanilla and salt; mix well. Stir in apples. Pour into pie shell. Bake at 375 degrees F for 15 minutes. Meanwhile, combine brown sugar and remaining flour; cut in butter until mixture is crumbly. Sprinkle over top of pie. Return to oven for 20 to 25 minutes. Cool completely on a wire rack. Refrigerate before serving.

BANANA SOUR CREAM BREAD
NGREDIENTS:
1/4 cup white sugar ·
1 teaspoon ground cinnamon ·
3/4 cup butter ·
3 cups white sugar ·
3 eggs ·
6 very ripe bananas, mashed ·
1 (16 ounce) container sour cream ·
2 teaspoons vanilla extract ·
2 teaspoons ground cinnamon ·
1/2 teaspoon salt ·
3 teaspoons baking soda ·
4 1/2 cups all-purpose flour ·
1 cup chopped walnuts (optional)

PREPARATION:
Preheat oven to 300 degrees F (150 degrees C). Grease four 7x3 inch loaf pans. In a small bowl, stir together 1/4 cup white sugar and 1 teaspoon cinnamon. Dust pans lightly with cinnamon and sugar mixture. In a large bowl, cream butter and 3 cups sugar. Mix in eggs, mashed bananas, sour cream, vanilla and cinnamon. Mix in salt, baking soda and flour. Stir in nuts. Divide into prepared pans. Bake for 1 hour, until a toothpick inserted in center comes out clean.

COOK TIME: 1 Hr
READY IN 1 Hr 10 Min
Original recipe yield 4 - 7x3 inch loaves
HINTS: You may need to cook about 10 minutes longer - just check and see. To make a more bread-like consistency, mix the dry ingredients in by hand. Try adding a dash of ground nutmeg and ground cloves to the mix for additional flavor. Using lite sour cream will sour cream will change the flavor. These loaves freeze well.

PERFECT PIE CRUST
INGREDIENTS:
4 cups flour
1 Tbsp sugar
1 Tbsp vinegar
2 tsp salt
1 ¾ cup shortening
1 large egg

PREPARATION:
Mix flour, sugar and salt together. Add shortening and mix until crumbly. In separate bowl, beat ½ cup water, egg and vinegar. Add to flour mix and mix until good consistency. Divide into five parts. Refrigerate at least ½ hour. These individual packets each make one crust. They may be frozen if wrapped well.

HINTS:
Lard makes the flakiest crusts and butter makes the most flavorful. Shortening and oil may also be used. Shortening is the easiest to work with. You may also use part of each such as lard and shortening or other combinations.

Liquids should be very cold when being added. It should be added very gradually. If the dough gets too wet, then more flour must be added making a tougher crust. On humid days, liquids may need to be decreased.
