The first settler was Thomas Westall when he was given a land grant by Mexico in 1825. It was named for James Simonton, who came here in 1850. The area continued to grow when the railroad came about 1888. For about ten years around the turn of the 20th century, a prison farm was here. The prisoners were kept busy with clearing land and raising crops, mostly cane and cotton.
Simonton was first incorporated as a village on 22 Januar 1979. Later, in 1986, it was converted to a city. The city was then governed by a city council rather than a Board of Aldermen.
