Cedar City history: Cedar City was originally known as Coal Creek for the nearby Creek which passed through coal beds. It was later changed to Cedar City due to the plentitude of Juniper trees in the area which were thought to be Cedar trees. Pioneers established the first iron refinery west of the Mississippi. Many of the settlers were from England, Scotland and Wales and were skilled miners, drawn to the area by their new Mormon faith and the plentiful mining occupations. Later, when the mines were mostly closed when they became unprofitable to run, most of the settlers turned to farming and raising livestock. By the early 1900's, tourism had begun to be established due to the proximity to Utah's scenic areas. Here is a good history page for Cedar City.
